I took note of the following during the day today on the Central Server - all times are US Eastern (New York) Time.
Time # of online players
8 am 62
9 am 73, but not too slow!
10 am 32
11 am 34
noon 28
1 pm 61
2 pm 48
3 pm 64
4 pm 49
5 pm 65
I don't know if this is typical - the Admins probably have a more thorough picture of user load at various times.

Nice listing, Pwyll. What would really be useful there is a continuing note like you made at 9am - how the server behaved to you at various times with that load, and maybe we could get a few others to chime in, and see when its bad, and for whom it is so?
(Hint hint - do it again tomorrow and I'll love you forever?)

Couldn't do it today - I log in from work and it was a busy one - but I'll see what I can do tomorrow. For what it's worth, the only serious lags I experienced today were around 12:40 and 1:30 EST. Also, I did noticed that the slowest lags did not always seem to occur when the most users were on.

You know...I *could* forgive you for that comment...but where would the fun in that be? Its far more fun to harass you about it. While it was most assuredly *not* family friendly by any stretch of the imagination...it was extremely funny. I give you points for creativity.
At any rate, any such notes from you guys about when you find the lag to be worst, and the load at the time, would be useful in helping to figure out the best solution, and much appreciated.

OK, I checked roughly every hour like last time, and today seemed like a pretty light day. The most people I saw online was 58 at about 1:30, when there was a noticeable lag.
Oddly though, the two biggest lags occurred when there were fewer people on. One was at 9:30 am EST, when there were only 29 players on, and the other was at 12:55 pm, when there were 53. When I say big lag, I mean it was minutes before the pages loaded. The one at 9:30 happened when I tried to go from the Inn to the Village, and the later one happened going from the Village to the Gardens.
For the rest of the day, I encountered no delays longer than a few seconds. I also don't know if there were more people on while the lags were happeneing and they were gone by the time I was able to view the list to see how many people were online.
In Java programming, I know that using static methods can create major delays when multiple users are accessing DBs. Does PHP have a similar issue?
